Masons of Yorkshire recommend that their gin is best served with orange, so with the clementine season in full swing this cocktail cooler is perfect as a festive aperitif! Best made in a jug or pitcher to share with friends.
- 50ml Masons Yorkshire Gin per serving
- Seeds of one vanilla pod
- 2 tablespoons Yorkshire honey or Demerera sugar
- 2 cinnamon sticks
- Zest of a lemon and lime
- 4 clementines (peel the rind of 3 neatly into small ribbons and squeeze out the juice, and cut the remaining clementine into slices)
- Ice, soda or sparkling water and something green to garnish!
Place the vanilla seeds and the honey (or sugar) into the bottom of your jug or pitcher. Stir in the zest and clementine and peel with a wooden spoon or muddler, pressing firmly to release the flavours from the rind. Add the cinnamon stick and stir for a good minute to release the flavour into the peel and honey or sugar.
Stir in the clementine juice (if using sugar, until any granules are dissolved) and strain out any pips, although clementines typically don't have many. Stir in plenty of ice, the clementine slices and top up with soda or sparkling water depending on taste. Then serve in a sugar frosted glass.
