- 1 Pint of milk ( plus a splash of milk for the next day)
- 6 slices of white bread, crusts removed and cut into cubes
- 1/2 onion
- 1 bay leaf
- 4 clove sticks
The trick here is to soak this overnight by placing the studded onion into the milk with the cubes of white bread, and place in the fridge with cling film over the top on a high shelf.
The next day simply warm the mixture with an extra splash of milk.
Bring to the simmer.
Once the onion has infused remove and place on a plate.
Blend the mixture with a small stick blender until smooth and add another splash of milk if required.
Season with salt and some freshly grated nutmeg and serve.
