Sausage Casserole

Preparation Time: 5 | Cooking Time: 45 minutes | Serves: 4

This winter-warmer is a family staple for our Director, Cheryl Garthwaite, who uses Blacker Hall Farm Shop Sausages and fresh vegetables to create this hearty dish.

We’ve updated the recipe with our Pork and Caramelised Onion Sausages – brand new for UK Sausage Week 2019!

  • 2 packs of Pork and Caramelised Onion Sausages
  • 1 large Red Onion
  • 1 Courgette
  • 3 Carrots
  • 2 Fennel Bulbs
  • 2 small hard Apples
  • 1 tbs Tracklements Caramelised Red Onion Relish
  • 1 tbsp Olive Oil (or your favourite cooking oil)
  • 1L stock
  • Fresh Rosemary and Thyme

  1. Roughly chop the Onion and add to a roasting tin with a small amount of oil.
  2. Add the Pork and Caramelised Onion Sausages and cook for around 10 minutes, or until browned.
  3. Meanwhile, chop the Carrots, Courgette, Fennel Bulbs and Apples. Add to the roasting tin.
  4. Season with rock salt and ground peppercorns, plus fresh Rosemary and Thyme (dried will also work) and cook for a further 5 minutes.
  5. Add Stock (we love Turkey Stock from the Butchery) and Tracklements Caramelised Red Onion Relish. Simmer for 5 minutes before covering with foil and placing in the oven at 180 for 30 minutes.
  6. Serve with Cawa Bakery Crusty Sourdough, or potatoes and your favourite steamed greens.
