This spicy marinade is perfect for Spring Lamb. Fantastic to marinade a spatchcocked leg of lamb, or if serving a smaller party, simply marinade lamb steaks. Given the unpredictability of the British weather, this marinade also works if simply roasting or grilling your meat and serve it with a delicious Summer salad from The Delicatessen.
- 1/2 tsp Tabasco
- 1 tbsp smoked paprika
- 2 crushed garlic cloves (smoked garlic is lovely too)
- 1/2 tsp cumin seeds
- 1 tsp Maldon sea salt
- Cracked black pepper to taste
- 2 tbsps. Yorkshire rapeseed oil
- 1 tsp ground coriander
- 1 red chilli, halved, seeds removed and finely chopped
Simply mix all the ingredients together and then liberally cover your spatchcocked leg of lamb with the marinade.
Cover the dish containing the lamb with cling film and place on a low shelf of the fridge overnight to let the flavours infuse.
