A perfect marinade, suitable for lamb or chicken, and can be used whether grilling or barbecueing.
- 2 tbsps olive oil
- 2 tbsps chopped fresh herbs (this could be rosemary, thyme, mint)
- 2 tbsps smoked paprika
- 1 tsp Maldon sea salt
- Freshly cracked black pepper
Mix together all the ingredients and cover the meat generously. Then leave in the fridge, covered with cling film, ideally overnight.
