Locally sourced lamb from George Wood, Carlecotes. Add a herb rub or marinade on the outside, or combine two to form a guard of honour roast.

Cooking: Hot sear for 10 mins at 220*C then allow 10 - 20 mins (depending on size and readiness preferrence) at 170*C/340*F/Gas 4 The juices from the centre will be clear when cooked to well done. Cover and rest in a warm place for 10 minutes before serving.
