Award-winning cockerill from Soanes Poultry, Middleton-on-the-Wolds, Yorkshire.

Cooking: Preheat your oven to 200*C. Cook for 20 mins, then reduce to 180*C/355*F/Gas 4 for 20-25mins per 450g. Check the juices from the breast bone & thickest part of the thigh for readiness, they will run clear when fully cooked through. (Giblets are inside the chicken - remove before cooking).
