Tender English Yorkshire duck; indulgent and delicious.

(Remove giblets from the cavity before cooking) Dry and prick the fatty parts of the skin, pre-heat oven to 220*C and roast for 20mins. Reduce to 180*C / 355*C / Gas 5 for 2 hours. If browning quick, cover with foil. The leg meat should break away from bone when fully cooked.
