Yorkshire goose. A rich and dark meat with an intense flavour.

Serves 6 - 8, 5kg

Preheat oven to 200*C. Cook for 20-25mins per 500g. Prick the skin all over. If stuffing do at neck end where there is a loose flap of skin, stuff loosely. Cover goose with foil and cook for 20mins initially. Then reduce down to 180*C for the remainder of the time. Remove foil for last 30mins.
