All of our pork is home-reared on our own farm.
Cooking: Preheat oven to 220*C. Pour boiling water over skin and pat dry, sprinkle with sea salt & place in oven to crackle. Reduce to 170*C / 325*C / Gas 3 (after around 30 mins) for 25-30mins per 450g. Juices pressed from the centre should run clear when fully cooked, rest for up to 20 mins before serving.
