How farming, producing and selling in one place makes your food better

How farming, producing and selling in one place makes your food better

Most food travels a long way before it reaches a plate. It changes hands, crosses counties, and often sits in transit for days before anyone even asks where it began its journey.

At Blacker Hall Farm, we believe in doing things differently. When it comes to food, we run a full farm to fork operation, meaning we farm it, we prepare it, and we sell it, all from the same few acres in West Yorkshire. Where we can’t farm things ourselves, we work with a selection of carefully chosen Yorkshire suppliers who share our values.

We've been farming this land for over a century, and for more than 25 years we've sold what we produce directly from our own counters. That's not really about tradition, it's about what happens when every stage of your food stays close, under one roof, in the hands of people who are accountable for all of it. That accountability is what makes the difference: there's nowhere for quality to slip between the farm and your fork.

Farmed here, not just stocked here

Before anything reaches one of our counters, it starts in the fields of our Yorkshire farm. The majority of our beef comes from our own farm, reared by family who've worked this land for generations. Our herd includes well-bred Angus, Hereford, Simmental, Belgian Blue and Limousin cattle, raised across our own 400 acres. Where we need more, to keep up with demand across the Butchery, Deli and our Barn Kitchen restaurant, we work with other trusted local farmers who rear to the same standard, rather than whoever is the most convenient.

It's an ethos that runs through our whole farm to fork operation. Not just our livestock, but our crops too. Grass, wheat, barley and maize are grown here at Blacker Hall Farm, and what we grow ourselves is how we feed our livestock. Fewer miles and fewer hands between field and shop means produce that's picked, or reared, closer to the point it's actually needed, rather than the point a supply chain demands it.

From the field to the kitchens

Farming is only the first stage. What happens next matters just as much.

Our Butchers work with whole carcasses, seaming out each muscle by hand rather than taking a few obvious cuts and moving on. Beef is hung and matured on the bone for a minimum of 21 days before it's ready. Our hams and bacon are dry-cured here, by us, the same way they always have been. Bread is baked fresh each morning. Nothing gets handed off to an anonymous processor along the way.

That's where a lot of the value gets added. Not in the field, and not at the till, but in the hours of skilled work and expertise that go into the preparation behind the scenes.

Why doing it all in one place changes the food

When one business farms it, produces it and sells it, a few things become possible that are not possible when those stages are split across different suppliers.

Food doesn't travel far, and it doesn't take long to get here. That means it reaches you at its best, not weeks past it. There's one business accountable for every stage, not a chain of suppliers each responsible for their own link and no one else's. Nothing gets wasted chasing a supermarket spec, because we can use the whole animal and sell produce as it's ready, not as a schedule demands.

None of that happens by accident. It's a choice that generations of this family have made, right back to when the Garthwaite's first took on Blacker Hall Farm in 1901. John and Anne carried it further, choosing to sell their own meat directly to the public, and the family makes the same choice today. That's how this farm has always worked, and it's why we can put our name to everything that leaves it.

Where we buy in, we do it properly

Not everything can be grown or reared here at Blacker Hall Farm. Where it can't, we choose just as carefully. Some of our meat comes from other trusted local farms, chosen to match our standards rather than convenience, and a few ranges, like fish and wine, are brought in from people we know and trust, and who share the same values as us. The same principle carries through: knowing exactly who we're dealing with, and why.

What it means for you

The result is food that tastes like it should. Beef properly matured on the bone for weeks, not shipped and sold on turnaround. Bread baked that morning. Pie and pastries straight from the oven.

It also means you can ask. Speak to someone at our butchery counter and they will be able to tell you how an animal was reared, not just what cut you're purchasing. That's a different kind of shopping experience to a shelf and a barcode.

If you'd like to see what that looks like in practice, visit us at Blacker Hall Farm. Walk the Little Farmers Trail, have a look round the shop, and ask the team behind the counters how what's in front of you came to be there. It's the whole story, told properly, in one place.
